Add this quick and healthy veggie side to any main or add tofu and enjoy it on its own
You Will Need
Air fryer (at least 2.5 qt)
Medium mixing bowl
Mixing spoon
Measuring spoons
Ingredients
4 stalks asparagus, ends trimmed and cut in half
4 brussels sprouts, halved
3 brown mushrooms, sliced
1 cup (50 g) extra firm tofu, cut into strips (optional)
2 cloves garlic, minced
1 tsp Italian seasoning
1/2 tsp sesame oil or olive oil
1/4 tsp soy sauce
Salt and pepper to taste
Toasted white sesame seeds for garnish
Instructions
- Place vegetables, tofu, garlic, oil, soy sauce, Italian seasoning, and salt and pepper in a large mixing bowl and toss to combine.
- Transfer into air fryer basket and cook at 350°F for 7-8 minutes or until cooked to your liking, shaking the basket halfway through.
- Remove from heat and transfer to a plate. Garnish with toasted sesame seeds and serve with steamed white or brown rice.
