Add this quick and healthy veggie side to any main or add tofu and enjoy it on its own

You Will Need

  • Air fryer (at least 2.5 qt)
  • Medium mixing bowl
  • Mixing spoon
  • Measuring spoons
  • Ingredients

  • 4 stalks asparagus, ends trimmed and cut in half
  • 4 brussels sprouts, halved
  • 3 brown mushrooms, sliced
  • 1 cup (50 g) extra firm tofu, cut into strips (optional)
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp sesame oil or olive oil
  • 1/4 tsp soy sauce
  • Salt and pepper to taste
  • Toasted white sesame seeds for garnish

  • Instructions

    1. Place vegetables, tofu, garlic, oil, soy sauce, Italian seasoning, and salt and pepper in a large mixing bowl and toss to combine.

       

    2. Transfer into air fryer basket and cook at 350°F for 7-8 minutes or until cooked to your liking, shaking the basket halfway through.

       

    3. Remove from heat and transfer to a plate. Garnish with toasted sesame seeds and serve with steamed white or brown rice.
